Did you know Mexican Rice was actually invented by Spaniards? They were the ones who brought rice to Mexico and started using them by mixing hot sauces along with veggies. Now, that is how Mexicans started adapting the culture of rice and named it after Mexican cuisine.
In this recipe, we will be adding another twist to the recipe by making Mexican rice with Chickpeas using Bechef Mexican Hot Sauce.

Try this amazing recipe where you will learn how to cook Original Mexican Chickpea Rice using Bechef Mexican Hot Sauce.
Bechef Mexican Sauce - 3-4 tbsp
Desiccated Coconut - ½ cup
Chickpeas (boiled) - 1 cup
Cooking oil - 2 tbsp
Broccoli (blanched) - ½ cup
Garlic (finely chopped) - 1 tsp
Onion (chopped) - ½ cup
Yellow Bell Pepper (chopped) - ¼ cup
Salt - To taste
Black Pepper Powder - 1 tsp
Rice (cooked) - 2 cup
Cashew (fried) - 10-12 nos
Grated coconut - For garnish
Take a pan and add Desiccated coconut to it.
Dry roast coconut until golden brown.
Keep aside the desiccated coconut.
Heat up the pan and add oil.
Add garlic and onion to the pan.
AddBechef Mexican Hot sauce,mix it well.
Add broccoli, Yellow Bell Pepper, chickpeas.
Add salt and black pepper powder and stir well.
Add rice and mix it well.
Add desiccated roasted coconut and cashew, mix well.
